For centuries, besides the conventional uses of plants as a source of human diets, they have also been used as potential sources of bioactive compounds such as biotherapeutics of different classes. In addition, many industries recently considered plant enzymes as potentially safe and green substitutions to conventionally used animal enzymes. The plant enzymes play critical functional roles in the overall plant development through the bioconversion of different nutrients from one form to others. They exhibit a special function in fruit development, growth, and ripening process. This chapter is aimed to provide a comprehensive overview of the recent development in research and applications of functional proteases, which are localized in the latex of fig (Ficus carica).
